this is totes not allowed for the candida diet- there is feta cheese in here but DAMN it tastes really good. Feta cheese+chick peas+cherry tomatoes. Add za’atar, olive oil, salt and pepper

got this recipe out of this month’s fine cooking magazine-they had a special on eggplant which I have always found fascinating. It has an interesting texture- the skin is shiny with a great color- and there are many different varieties. Pretty much a photographer’s dream. I sound crazy so I’ll stop:) This was super duper yummy

COCO-NUTZ! I’ve been obsessed with coconut oil for quite some time now- but I’m just now also getting into the juice, flour, shredded- everything. My roommates used to make fun of me for cooking with something I also put on my skin.
These muffins are completely grain-free and are actually quite moist and still have a little bounce to them. I wish I had of tweaked the recipe so they would be WAY more lemon-y-BUT I still had 5 of them at once. Whoops.
If you need the recipe just ask! If I can bake these, so can you- I was never taught how to bake.

okay so I had agave nectar and dates! I feel a bit up in the clouds after eating this, but was it worth it? yes.

afternoon snack that is super simple. the tomato reminds me of when my best friend’s mom would grow tomatoes in her yard- they were so fresh and tasty all you needed was salt and pepper. my nutritionist told me to replace grains with startchy vegetables like squash and yams. these are simply baked for about an hour then I added oil and pepper. super startchy and great!

grapefruit! a very low glycemic fruit that is friggin’ awesome and doesn’t seem to bother people with insulin levels all wacked out like mine…
